古老非洲大陸東部的衣索比亞(Ethiopia)，是咖啡的原鄉，也是咖啡的基因寶庫。
衣索比亞兩大產區是Yiragcheffe及Sidamo，西達摩是衣索比亞著名的咖啡產區，位於衣索比亞的南方，和肯亞相鄰。

產區栽種地為紅色肥沃土壤，平均海拔1950公尺，年平均降雨量則大約1100mm左右。超過2000種以上的咖啡樹在此繁衍茁壯，成就衣索比亞咖啡變幻莫測的風味。衣索比亞南方的西達摩(Sidamo)，是該國精品咖啡的主要產區。西達摩區採用特殊訂製的木製棚架，進行細緻日曬處理程序，呈現出來的杯測結果是前所未見的純淨、豐富的草莓、玫瑰花、茉莉花茶香氣與糖漿般的甜順口感。
G3,G4是衣索比亞日曬的極高等級，在美國一杯要價12美金，口感令人驚豔，烘焙前七天以水果調性為主,豐富水果香氣，七天後轉帶有酒的調性，餘韻則有苦可可甜。

西達摩產區日曬具有淡雅莓果風味，奶油般柔順質感，核果可可韻味佳、日曬的厚實、高甜度口感完整呈現於咖啡中。衣索比亞在人們的印象中總是窮苦的，然而在看似貧瘠的土地，卻孕育出舉世聞名的咖啡豆，在紅色的赤土中熠熠生輝.

Coffee details
Sidamo features an extraordinarily wide variety of coffee flavors. Many different grades of both washed and unwashed coffees are produced, and there can be striking differences from town to town. Varying soil types, micro climates, and especially the countless heirloom coffee tree varietals make for a kaleidoscope of different flavors. Another striking characteristic of Sidamo coffees is that even the washed coffees often retain a salient fruity characteristic, while having much more clarity and brightness than their unwashed counterparts. Excellent coffees of many different profiles can be found in all corners of Sidamo.

Flavour detail
A well balanced coffee with medium acidity and body and notes of lemon and blueberry with a clean and sweet cocoa finish.
